- Advise customers on wines and food pairings
- Lead the creation and updating of the wine list in coordination with the Head Chef and General Manager
- Oversee wine shop operations, including product organisation and display
- Control wine and beverage stocks, ensuring proper storage and ordering
- Organise tasting events and wine experiences in the shop and associated spaces
- Lead and train the team of sommeliers and shop staff, setting performance goals
- Collaborate with the kitchen and dining room team to offer gastronomic pairings
- Implement cross-selling strategies between the shop and F&B spaces
- Supervise wine service, ensuring proper presentation and techniques
- Organise training sessions on wines, pairing and customer service
Profile
- Minimum of 5 years of proven experience as a Senior Sommelier or Head Sommelier in fine dining restaurants or 5-star hotels
- In-depth knowledge and inexhaustible passion for the world of wine (national and international), spirits, craft beers, waters and other beverages, including emerging trends and regions.
- Inspiring ability to lead, motivate and develop a team of sommeliers, fostering knowledge, service excellence and continuous learning.
- Experience in creating and managing a diverse and balanced wine list, optimising customer value and business profitability.
- Proficiency in stock management, inventory control, proper storage, supplier negotiation and cellar cost optimisation.
- Ability to provide impeccable and personalised wine and beverage service, exceeding the expectations of the most demanding customers.
- Excellent communication and interpersonal skills, both with the front-of-house and kitchen teams and with customers, translating oenological complexities in an accessible and engaging way.
- Proactive spirit in researching new wines and producers, organising events and tastings, and continuously enhancing the restaurant's oenological experience.
- Fluency in Portuguese and English (mandatory). Knowledge of other languages (French, German, Spanish) is considered an asset.
- Recognised wine certifications (e.g. WSET Advanced/Diploma, Court of Master Sommeliers) are highly valued
